Easy, nutritious green smoothie!

No matter what dietary theory you subscribe to, pretty much all of them promote eating lots of leafy greens.  Too bad there are times that you just don't want to or don't feel you have the time to prepare them!  Enter the green smoothie.  Most people at this point are familiar with green smoothies or some version of them.  You can easily enjoy greens without really tasting them (great for picky kiddos as well).

I like to prepare mine light on the fruit, heavy on the greens and if I need to be full for a long time, heavy on good quality fat.  If you are new to the green smoothie movement, I suggest doubling the fruit in this recipe (or adding half a banana) and then over time, you can reduce the amount of fruit.  Fruit has a lot of great qualities but also a lot of sugar so if you can get your micronutrients and vitamins from veggies, that's all the better!

Making a smoothie at home takes less than 5 minutes so make time for this if you need breakfast in the morning.  Sometimes I will have this for dinner as well (or without the fruit and add 10 drops stevia for sweetness) when I don't feel like cooking.

August Smoothie Fave (always use organic produce whenever you can!):

3/4c filtered water (always add your liquid first)-you can use unsweetened almond or coconut milk if you like more creaminess but I think water is great here.
1/2 peach (I use local, organic peaches that I have cut up and frozen)
1.5c baby spinach
2 big kale leaves, stems removed
1/2 avocado, pitted
1tbsp raw coconut oil
1c ice cubes

Blend until smooth and creamy and enjoy!
